The Terroir

The estate's vineyards thrive in the distinctive morainic soils of Canavese, enriched by mineral deposits from the ancient Mont Blanc glacier. These sandy, stony soils contribute a remarkable minerality and vibrant acidity to the wines, creating a unique signature that speaks of place and tradition. At elevations between 300-350 meters, the vines benefit from an ideal microclimate that allows for optimal ripening while maintaining freshness and complexity.

Aὐτόχϑ∞ν Erbaluce di Caluso
DOCG

Named Autocton and written in ancient Greek to honour the use of indigenous yeasts, this distinctive wine is exclusively made from our oldest vines, aged between 30 and 50 years, in the historic Macelio and Madonna vineyards. By utilising spontaneous fermentation with only the natural yeasts found on the grapes, along with extended lees ageing and careful batonnage, we produce a wine of exceptional complexity. The result is a deep expression of Erbaluce, boasting a remarkable ageing potential of up to two decades, with each bottle unveiling the historic richness and noble evolution of this ancient variety.

Erbaluce di Caluso Passito
DOCG

Our Passito represents the most contemplative expression of Erbaluce, crafted through a patient process that begins with careful hand selection of perfectly spaced clusters. These chosen bunches slowly transform through winter in the winery's attic until February, often developing noble rot that adds remarkable complexity. After natural fermentation with indigenous yeasts, the wine undergoes an extensive four to five-year aging period in both steel and wood, with annual spring decanting. The result is a crystalline, amber-hued wine with golden reflections, offering an intricate bouquet of fresh citrus, vanilla, and refined tobacco. Despite its sweet nature, it maintains the characteristic mineral backbone of our terroir, complemented by waves of almond, apricot jam, and dried fruits. With just 2,800 bottles of 500ml produced annually, this rare treasure demonstrates remarkable aging potential.
